Pacific Coast Spirits is an independent, award-winning craft distillery based in Oceanside, California, producing premium grain-to-glass whiskey and small-batch spirits that reflect the character, agriculture, and lifestyle of the California coast.
From milling and fermentation to distillation, barrel aging, blending, and bottling, our process is built on craftsmanship, transparency, and control. Every spirit is created with the intention of delivering depth of flavor, structural integrity, and versatility — whether enjoyed neat or in a thoughtfully built cocktail.
Our portfolio includes American Single Malt Whiskey, Blue Corn Bourbon, California Wheated Bourbon, Triticale Bourbon, gin, agave spirits, and limited-edition specialty releases — each designed to showcase innovation within traditional distilling methods.

At Pacific Coast Spirits, grain-to-glass is not a marketing term — it is our operational standard. We source quality grains, mill in-house, ferment onsite, distill with precision, and age barrels under our direction in Oceanside, California.

Founder & Head Distiller
Pacific Coast Spirits was founded by Nicholas Hammond, an entrepreneur and head distiller driven by the belief that true craft spirits should be built from the ground up — not sourced and labeled.
Nicholas began Pacific Coast Spirits with a commitment to California agriculture, independent production, and long-term brand building. His approach combines entrepreneurial vision with hands-on distilling, developing mash bills, overseeing barrel programs, and guiding product innovation.
Under his leadership, Pacific Coast Spirits earned multiple medals at the San Francisco World Spirits Competition, including consecutive Double Gold recognition for American Single Malt — solidifying the distillery’s reputation among California craft producers.
Beyond production, Nicholas has built Pacific Coast Spirits into more than a distillery — evolving it into a hospitality and brand platform supporting private label partnerships, custom blending programs, and strategic growth collaborations.
